It is also the method used in the 18thC kitchen. Using Christine Farber's method, http://msupress.msu.edu/bookTemplate.php?bookID=67 I put fruit sugar and the juice of one lemon and cook it down, skimming. NO pectin is needed. I have successfully done canteloup, raspberries, strawberries, blueberries, cherries, pumpkin, tomatoes, you name it. I'm new to my flat top range (not a fan, BTW), so I can't say that my flat top is all that clean anyhow. I'm biding my time until it blows up so I can buy something else!
